This has easily become my favorite meal for lunch or dinner! There’s so much good in this; protein, fiber, good carbs, and flavor! There’s leftovers too which always makes for a good grab meal!
All you need are these ingredients (all are pictured):
- 1 can: Black Beans (No Salt Added)
- 1 can: Rotel
- 1 packet: Low Sodium Taco Seasoning
- Whole Grain Brown Rice
- 1 tube/package: Turkey Sausage
- 1 jar: Ragu Simply No Sugar Pasta Sauce
Directions: In a small pan, add the can of black beans (drained) and Rotel (drained). Turn to medium heat, stirring occasionally. Once you can see it’s getting hot and bubbly, reduce heat. In a large sauce pan, boil your water, once boiling add in your brown rice and follow directions for your rice. I love this brown rice because it’s whole grain and it comes in pre-cooked portioned bags that are over half the cook time! In a skillet, start browning your Turkey Sausage (yes this says Breakfast but it’s dang tasty for any meal!). Once the meat is browned, drain if necessary, then add in your pasta sauce and sprinkle in taco seasoning. Stir the three ingredients until well blended. Once the rice is ready, drain and return to pan. Drain the Rotel and bean mixture again. I then mix the bean and Rotel mixture in with the rice. I’ll start with that on my plate and then add the meat mixture on top. Enjoy 🙂
